One Planet Plot

After working with Edinburgh chef, Fred Berkmiller for the launch of the 2017 One Planet Picnic, we were delighted to work with him on a new programme of support for schools to experience growing, cooking and eating across the seasons and the academic year. 

The ‘One Planet Plot’ project brought together chef Fred with pupils from Musselburgh Grammar School and Dalkeith High School to work in a garden that supplies his two Edinburgh restaurants.  Pupils from both schools were introduced to some new ingredients, tried new tastes and produced delicious lunches including a superb Christmas lunch.  The One Planet Plot activities covered planting, growing, prepping and cooking produce. 

This kitchen garden is run on sustainable principles:

  • making best use of the available resources
  • thinking about what will work well in the growing conditions there
  • nurturing the soil’s fertility and
  • looking for innovative, low-cost ways of re-using materials to extend opportunities for growing. 

Pupils in school contexts can also develop a One Planet Plot, producing harvests in the school grounds or nearby to use to make a shared meal or contribute to a One Planet Picnic. Sowing new crops and nurturing food plants to ensure a continuity of harvests is a dynamic, direct experience of how the changing seasons bring different tasks and opportunities for producing food that's healthy, sustainable and very tasty.

The name ‘One Planet Picnic’ reminds us about living within the limits of our one planet and that our food choices have impacts beyond our individual health.  Our food choices represent 16% of greenhouse gas emissions from Scottish households, not including emissions from any food waste. Happily, there’s a lot that we can do to have food which is good for the planet as well as good for you; from reducing food waste to eating local, seasonal food.

The project also helps us contribute to targets and indicators of the Global Goals.
